Pasta salad with spaghetti, tuna, lemon, and bottarga."
This pasta salad recipe combines spaghetti with three ingredients that represent the taste and memories of the Italian summer by the sea: tuna, lemon, and bottarga.
With the addition of a few capers and fresh mint, this dish with cold spaghetti is quick, easy, and so delicious that you’ll certainly want to have a second portion.
The recipe serves four people, but you might want to prepare a bit more, just in case for seconds!
Ingredients
• 400 g fresh tuna
• 280 g spaghetti
• 80 g capers
• generous amount of bottarga
• lemon
• fresh mint
• salt
• pepper
• extra virgin olive oil
Let's get started!
Bring a large amount of water to a boil. Salt the water and cook the spaghetti al dente.
Meanwhile, dice the tuna and drizzle it with extra virgin olive oil.
Sear the tuna cubes in a very hot pan for 1 minute.
Drain the spaghetti and place it in a bowl of very cold water: This stops the cooking process and preserves the al dente texture.
Once cooled, transfer the pasta to a large salad bowl and season it as you would for a salad with extra virgin olive oil, salt, pepper, and grated lemon zest.
Add the tuna cubes, capers, and grated bottarga according to taste.
Garnish with fresh mint or oregano leaves and serve it to your hungry guests!
